Scrumptious Sloppy Joes!

Sorry guys, I am just on a food kick right now.  I love crafting, but I love cooking just as much. : )  I just don't like the cleaning up part of it haha.  I have tons of foods I have wanted to share and this one is a tasty sloppy joe mix.  Have you ever watched The Pioneer Woman on Food Network?  Well, she is one of my favorites to watch.  She is also a blogger so she has an entire site of all her awesome creations, even if they haven't been on Food Network.  Every Saturday morning...you can guarantee that I will be watching Ree then Trisha Yearwood if they are on.  Trisha can sing her butt off AND can cook.  She recently made some chocolate sauce(from her MS gal pal) to go over a homemade biscuit recipe for breakfast.  Being from MS, I feel like I seriously missed the boat on this one, so I feel like I HAVE to make that delectable sauce.  

I alter almost everything in any recipe in some way, shape or form so here goes one of the best tasting sloppy joe mixes I have made. So naturally I would change up Ree's sloppy joe recipe and make it my own.   I normally sautee' onions and tomato paste....base to spaghetti sauce and add a bit of water, garlic powder, and Worcestershire Sauce and simmer.   Buttery, toasted buns are always a must have.

*The only change I would make to this recipe is I would add in some paste(because I love the taste and it needs to be a bit thicker).

Ingredients


  • 2 Tablespoons Butter
  • 2-1/2 pounds Ground Beef
  • 1/2 whole Large Onion, Diced
  • 1/2 Large Green Bell Pepper
  • 1/2 Large Red Bell Pepper
  • 5 cloves Garlic, Minced
  • 2 cups Ketchup
  • 1 cup Water
  • 2 Tablespoons Brown Sugar----this really made it!
  • 2 teaspoons Chili Powder (more To Taste)
  • 1 teaspoon Dry Mustard
  • Worcestershire Sauce, To Taste
  • Hamburger Buns
  • Butter

Preparation Instructions

Add butter to a large skillet over medium high heat. Add ground beef and cook until brown. Drain most of the fat and discard.
Add onions, green pepper, and garlic. Cook for a few minutes, or until vegetables begin to get soft.
Add ketchup, brown sugar, chili pepper, dry mustard, and water. Stir to combine and simmer for 15 minutes. Also add tomato paste, Worcestershire, s&p and Tabasco if desired. Taste and adjust seasonings as needed.
Spread butter on your buns and brown on a griddle or skillet. Spoon meat mixture over the buns, topping with a slice of cheese if it makes your skirt fly up.  In our house we like the MAYONNAISE and sliced pickles. 
We served ours with homemade potato wedges.  Sliced and fried right up and sprinkled with a little bit of s & p.  
To Make Healthier- use Wheat buns, X the mayo & use mustard or nothing, add a tomato, sub the fries for some veggies. Use light brown sugar.  You may want to do something different, but this is what I would do if I was trying to reduce calories.

*Salt is seriously an ENEMY to me.  If I eat even a tad too much....I swell and feel all burny{I like to make up words} bloated.  I don't put salt in anything if I can help it because of that.  I love to cook and have people to cook for, but just know you are going to have to add salt if you want it.  : )
Okay, so stayed tuned for some chocolate sauce over biscuits in the future AND I plan on making a stuffed Cream Cheese King Cake.  Although, Mardi Gras is not celebrated in the Carolinas...I LOVE it.  It is one of the top things I miss about the coast is all that jazz and celebrating fun. Not to mention the King Cakes.  Bringing some of that into our home makes me happy.
