Chicken and Dumpling Pot Pie

You can't get my soul foodie than this!   Chicken and Dumplings and a Pot Pie all mixed in one.

I made a chicken and dumpling meal maybe 2 nights before and for some reason I am always making too much food so then we have left overs.  Not a bad thing, but you don't want to eat the same food more than a day.   Then, I need to come up with something else to make with the leftovers. :)


Chicken and Dumplings
4 Chicken Breasts
Soup Pot
A few sliced celery stalk
Sauteed' onion
Brown Rice
Flour/Water/Garlic powder seasoned dumplings
Chicken Bouillon Cubes

Throw your chicken in a boiling pot of bouillon cubed up water until they are falling apart.  Take them out and let them cool slightly.  Enough to where you can touch them.  Cut your fat and other things off you don't want to eat.  I don't like the fatty part of it so I just cut it off.  Leave it on while you cook it for the extra juices.  Pour chicken water into a larger pot and add a few seasonings.  I normally just add a bit of garlic powder and Nature's Seasoning blend.  Drop in some baby carrots or other veggies. I let it cook for about 2 hours on medium.  

  I opened my steamed rice bag(while frozen still) and dropped it in the pot. Mix up your flour/water/seasoning together where it is a little thick but too thick.  You want it to be able to fall off your spoon easily.  Drop each tablespoon into the boiling surface and once it pops back up you are good to go.  You can drop several at the same time but just not too close to each other.  Once it pops up you can drop another closer by it and not have to worry about it sticking.   You may have your own version of dumplings, but this is just how I was taught to do it.  I have been meaning to try the rolled out flour into the paper thin strips as dumplings, but haven't got around to it.   I let it cook for about another hour and it was ready to eat.  You can refrigerate your Chicken and Dumplings until you are ready to make your pot pies.  

*The creamy color will come from some of the flour mingling with the chicken water.

2 Deep Dish Pie Crusts- Let them sit out until thawed.  

Heat up your leftovers and mix in corn, peas and green beans into your chicken and dumpling mix and pour into your pie crust pans.  Put on your top pie crust and pinch together.  Brush with milk, butter or water.  Bake in the oven for a while until nice an golden brown.  I baked it for about 35 minutes.  It didn't take that long to cook, because everything was already heated up.   

I really don't measure much, and I hardly every make the same exact thing the same way more than once.   It actually came out pretty good and who doesn't love a nice pot pie.  





Celery Stalks that Keep Growing

Will celery keep growing after you cut the stalk?

YES!

So crazy, I really didn't believe it.  I am a believer of things when I see them not just from hearing it.  I started checking into different things regarding gardening, because I wanted to start a garden.  I have never attempted a garden, because if all my flowers have died how would actual food stand up?  It wouldn't have a chance.  I am happy to say I AM growing a garden and it is getting bigger and just starting to bud a few things.  I figured the only way I could start a garden is by buy plants that had been nurtured and started already for me.  You know, so they would have a fighting chance.  I have practically killed everything that I have tried to grow.  Sad really.

I am not sure if there is a science to the whole celery stalk thing, but I did try it.  I put a little bit of water at the bottom of my container and put my celery stalks bottom in it and left it alone. I did cut straight across and removed all of the stalk at the same time so it would be even.   After a few days the middle started to grow up.  After a few days around the stalk started rotting.  I then cut off the outside, put it in a small cup in the window sill to get sunlight and nothing....everything started rotting.  Not sure what I did wrong, BUT the point is that it works.  Now, I don't know how apt I would be to actually eat the celery growing from the old celery....just because of that rot factor.  If it didn't rot then yeah.

A Mother's Love Project how to:

Paste to your favorite designed scrapbooking paper.  You can frame it, laminate it or just hang it as is on your wall or fridge.   Cute right!  My mom actually did this with my youngest sister and I just had to share it with ya'll.

Make Your Own Ribbon Pony Tails!

Little girls are so lucky, they get to wear all kinds of pretty little pony tails and bows.  Normal bows do cost a bit and it is either you love it or not so much.  Make your own hair bows and save money and customize it to your outfit or liking.  Ribbon is pretty easy on the wallet and has endless possibilities.  Check out these cute hair bows the girls are sporting. 




Pretty simple right. Homemade Italian Creme Cake


Have you ever had the pleasure of tasting an Italian Creme Cake?  In this area they are only seasonally made at the local grocery store during the Fall.  This is my husbands number 2 favorite cake under pineapple upside down cake.  When your hubby says he loves something that much and is so disappointed when he couldn't find it in the store.  I got to work researching different recipes so I could make it for him.  I always look at the reviews for any recipes I am looking up to find out what worked and didn't.

CREAM CHEESE FROSTING
*If too thin, you can add a little more powdered sugar and if too thick you can just add a little splash of milk or buttermilk the mix.  

Preheat oven to 325 degrees F.  For cake: Cream butter, shortening and sugar.  Add egg yolk one at a time, beating after each addition (this is an important step!) Stir in baking soda and buttermilk.   Add sifted flour into batter, alternating with the buttermilk mixture.  Add vanilla, coconut and chopped pecans.   Beat egg whites and fold into batter.

Pour into a greased and floured round cake pan.   I like the way round cakes look better, so I went with a round cake pan.  My go to cake pan is the little $1 cake pans so I can just throw them out when I am done.  Bake for 45 minutes, or until cake tests done.  Remove from oven, cool completely before frosting.

For frosting: Beat cream cheese and butter.  Add vanilla, powdered sugar, and pecans.  Continue to beat until you get a spreading consistency.

*This cake was the most delicious and moist cake I have ever made.  I did change a few simple little things like almonds; I added a little more vanilla than was called for and I added almond extract as well.  It was absolutely divine and arguably better than any store made cake.  Someone else's old family recipe has become our new old family recipe with a few changes of course.  I actually made this cake for his birthday hence the football themed napkins and plastic "TOUCHDOWN" table decor.  I was super happy with all of the results.   There is nothing like a delicious cake to celebrate with.

Say Thanks with a Treat Basket!



How do you say thank you to co-workers with spending much and making everyone happy? Give them a treat basket.  Who doesn't love a treat.  Even if someone is on a diet it is snack size so it isn't that bad. 


My husband finally got his own truck and own route in May and he wanted to tell the office people thanks.  They schedule his stops and all kinds of other things for all of the drivers.  He wanted to thank his boss Chris for the most part, but hey you can't leave everyone else out.  A simple and inexpensive way to say thanks.  

We did mini cinnamon buns and I made some wild berry and blueberry muffins.  I individually wrapped them so they could be portable, less messy and saved for later in ones desk if wished.  So if you would like to just say a little thank you and not go outside of budget, then this is a great way to go.

Repurposing Glass Jars


I love repurposing things rather than throwing them away.   I have found a new appreciation for glass jars.  My latest repurposing activity was a Vlasic Pickle Jar!  I am working on my 2nd jar currently and plan on turning it into a flour jar.  It was really easy to do.  I had 2 jars; 1 was a Mt. Olive jar and the other was a Vlasic.  I was not able to get the plastic label off the Mt. Olive jar.  My kids took it upon themselves to store their crayons and other drawing tools in it as storage.  Proud mama moment there.  However, the Vlasic pickle jar has paper which is so much easier to get off with a little soaking.   It has a really nice design as well.  It has the 20, 40, 60 ounce lines.

1. Clean your pickle jar and let it air dry....make sure the pickle smell is gone. 
2. Spray paint your lid and let dry - I used metallic gold.
3. Tape your rectangle off for your black paint center. 
4. Paint a few coats of paint and let dry.
5. Line with liquid lead paint in a dotting motion around your painted rectangle.

After everything is all nice and dry you can place your descriptive block stickers on your jar or use the small chalk to write it.  I had a pack of multicolored scrapbooking sticker blocks that came in a set, so I just used those.  I do realize there is 1 letter that is a different color than the rest.....that is all I had and plus I liked that it made it not so plain.  Pour in your sugar or other dry ingredient you wish to decoratively store!

IF YOU WANT TO USE CHALK:
Use your sponge brush and alternate with the design in between drying.
1- sponge pat paint horizontally
2-  sponge pat paint vertically 
Repeat and let dry and it even works on plastic.

*One more thing I have found is that black acrylic paint is the same exact ingredients as chalkboard paint. I have not found any issues with using black acrylic paint as chalkboard paint.  I came across this discovery when I painted our kitchen door with chalkboard paint and ran out before it was completed.  I got to looking at the backs of the bottles and finished the door up with black acrylic and it worked just fine.

Homemade Banana Ice Cream

Banana ice cream treat anyone?

Did you see my kids hands shoot up and wave around everywhere?  Probably not, but they did that.

 They seriously could care less that it was just frozen bananas they got for a treat.  I even managed to sneak some wheat germ in there.   They loved this alternative.

Banana Icecream:

Slice a few bananas and throw them in a freezer safe ziploc and leave it for about 20 minutes until frozen.  Take them out and let them thaw for a few minutes and blend slightly and VOILA you have healthy icecream.

Frozen Yogurt Drops

What you need:

Your favorite yogurt (Dannon Light Strawberry)
A baggie
Cookie or Jelly Roll Pan
Wax or Parchment Paper

Spoon or pour your yogurt into a baggie and place in the freezer for about 15 minutes so it will firm up a bit. Check it in about 10 depending on your freezer settings.  * Placing it in the freezer helps get a more uniformed yogurt dot.  Also, the yogurt will pretty much pour out the bag if you just try to do it straight out the fridge.

Pull your yogurt baggie out the freezer and snip the very corner off a side.  Not too big, because the yogurt will not come out neat.  Squeeze your dots onto your covered pan and once done you want to place the whole pan in the freezer...the longer they are in the longer they will stay frozen.  We only did about 1 hour and pulled them.  They start defrosting pretty fast.  Super cold yogurt...no complaints and it is a great healthy snack.  I hope you enjoy these if you get a chance to try them out.  A really simple and budget friendly way to beat the heat this Summer.

Save Money the Easy Way

Not every one has that fabulous ability to put cash away or pick it up and let it accumulate.  So, if you are one of those unsavers, then this will help you out tons.  You will be able to save up for that vacation, mini trip or anything else you are wanting to save up for.
  • Each week take 20 bucks and go to the bank to change it to $1 coins.
  • Empty your change collector in your car about every 2 weeks.
  • Empty your purse of the excess change about every 2 weeks. 
  • Ask for half dollars or other odd change so you are more prone to keep it.
  • Another thing you can do is have your bank transfer a said amount when you are paid into your savings account- transfer an amount that won't be missed as easy.
*You can buy rollers or you can go to your bank and they will give you rollers.  They distribute them back out to other banking customers, so it is easy for everyone.  

Coin machine charge .10 on the dollar here and I think and that is just crazy.  Old fashioned way prevails for us.  We like to keep what we save not pay out because we didn't want to count it.  My husband has been doing this for years and it allows us to have vacation funds or to save us in an emergency situation.  With actual cash, we tend to spend it because it easier to spend or swipe the card.   When you see a bunch of change you will less likely go count it out and roll it over spending cash, so it saves.  Most people are busy and do not have the time to sit, count and roll so the inconvenience helps save.  This works for us and may or not work for you, but I wish you the best of luck in your saving adventures.

Clean Your Oven~ After 4 years!

Yeah, I know that is so crazy.  I can honestly say that I don't think I have ever cleaned the oven in the 4 years we have had our oven.  Shortly after us moving here, our oven went out.  It went out on Easter weekend and we ended up having to cook dinner in our oven/microwave in one.  Luckily it did a great job.  So if you ever have an emergency with your oven and you get stuck without one.....the microwave with the oven rack/broiler at the top works beautifully.



















Sprinkle baking soda on your mess and spray with vinegar.  When you spray the vinegar onto the baking soda it will fizzle up.  I did not use a specific amount, just enough to coat my oven.

* Don't spray the heating bar, because it will cause a white and yellow residue to splatter off it onto the oven walls when it heats up.

I actually scrubbed and repeated because it was so disgusting and dirty.  So it actually took all night and then the next day to clean.   I have seen where other people have had those magically over night and scrub miracles, but I was not so fortunate.   I really have no clue why I have never cleaned the oven before.  I really didn't pay attention to how yucky it was.  I mean from the beginning to the end it was a major difference.  I know you can't see to well on the difference I got out of the oven racks but it worked.  I mean it is not perfect, but the rest really wouldn't come out.  When I was scrubbing...I used the potato smasher to hold up the heating glow bar thing(sorry I have no clue what it is called).

After the fact, I covered the bottom with foil to catch any further messes.  I also make sure that I am putting any casserole dish or other dishes placed in the oven on a cookie sheet or jelly roll pan to make sure nothing is spilling out into the oven again.  It is said that the food tastes better when you bake it if your oven is clean.  That is the main reason that I went to take a look at it and discovered that mess.  My oven is still clean and I can promise you it will never look the way it did again.  For the record....the food does seem tastier.  I am not sure if it is because the oven is clean or the fact I KNOW it is clean that makes it taste better.

Potato Log Soup


Holy moly!  We are fans of those yummy seasoned and deep fried potato logs! The little convenient store up the street has the beset potato logs.  I normally never eat at convenient stores, but I will make an exception for these.  I really wanted potato soup but I also really wanted some potato logs, so I mixed them together.  I have found over the years randomly mixing different things that sound like they go good together often turns out to be some of the best recipes.

Potato Log Soup

  • 4 Red Potatoes
  • 10 +2  Seasoned Potato Logs
  • Cream Cheese- 8 ounce pack
  • Sour Cream- few tablespoons
  • Butter- tablespoon
  • Garlic Powder- sprinkle
  • Onion Powder- sprinkle
  • 1 small onion- sliced and sauteed until golden brown
  • Crisped Bacon or cubed ham
  • Cheddar Cheese- small chunked
  • Parsley- Garnish

Cube and boil your red potatoes down until you can insert your fork in with ease.   Add your sprinkle of seasonings in...you won't need much because potato logs have so much flavor.  Add your cream cheese in so it can start to melt into your potatoes; add butter; add your meat; add your caramelized onions; crumble your 10 potato logs into your pot and let simmer for about 45 minutes.  Crumble a few pieces of cheese in the bottom of each bowl and ladle your soup in, add a dollop of sc on top and mix in.  Garnish your bowls with the 2 remaining crumbled logs, crumbled cheese and sprinkle your parsley to make it pretty!  There is nothing better to add to this dish except for a piece of FRESH french bread.  Mmmm....mmmm....mmmm!

*If you need a more creamy potato base you can add instant potato flakes.  I am normally not your cook all day kinda gal, so I cheat and after my potatoes are all tender...I add a bit of flakes to make my base. :)

Now, grab a beer and you are good to go.  My husband and the kids loved this potato soup and I was told all the other potato soups would have to be kicked to the curb.  It really doesn't matter what time of the year it is a good bowl of potato soup is always welcomed.

Make Your Own At Home- Weed Killer

I sprayed down the weeds in the morning before it started getting warm around 10 am.   Spray the center really well so the root gets saturated.  I did read about the weed killer not harming the surrounding grass, however be careful not to spray the grass because it will kill it.  I had TONS of weeds, so I sprayed and refilled and then resorted to pouring because my hand was killing me from squirting so much.  If you should be so lucky not to be infested with weeds then the spray bottle will work great for you.   We cut the grass and all the weeds were gone AND the grass was not badly damaged.  I sprayed a day before we actually planned on getting the yard cut.  It was not very noticeable at all after all the shriveled up messes were mowed down.  The above photos were tests spots and not where there was a bunch of green grass.  All of the weeds shriveled up and turned black and it has been about 1 1/2 month and those particular previously sprayed weeds have not returned.   I wish it would send the memo out to the other weeds so we can be done with it.  I doubt that will happen so spray on! 

*Repeated use of the salt can be toxic to the soil. *I HAVE NOT HAD TO REPEAT*
